We are officially in the season of all things pink & red. In the spirit of love, we are making the perfect breakfast for canoodling in bed the morning of Valentine’s Day. What better way to celebrate love than to create a recipe with chia seeds, which are good for your heart. Alongside the most delicious heart shaped fruit, strawberries! This breakfast is easy to make – you can eat two or three of these lil puddin’ jars and still feel light enough to take on your morning activities (not that I ate 2-3 jars of them or anything…)
Strawberries are packed with vitamins and minerals such as vitamins C and K, folate, potassium, & magnesium. They are low-calorie and fiber-rich. Strawberries also improve heart function and reduce risk of developing diabetes and high blood pressure. The Arthritis Foundation recommends eating strawberries as they are abundant in antioxidants and detoxifiers, which help reduce gout and arthritis pain. Strawberries also reduce inflammation in the body.
We have talked about the benefits of chia seeds in previous posts (we love a good reminder), but chia seeds are packed with antioxidants, fiber, & protein making them a popular superfood. Coconut milk is also loaded with saturated fats also known as medium-chain triglycerides (the good fats).
Ingredients:
1 package of fresh strawberries
blueberries
1 tsp honey
2 cups coconut milk
1/2 cup of chia seeds
Directions:
Mix chia seeds into coconut milk. Stir, cover, and put in the refrigerator to set for 1 hour.
Puree frozen strawberries in a food processor with 1tsp honey.
In a mason jar, put strawberry puree at the bottom of the jar and spoon chia seed mixture on top.
Top with strawberries and blueberries & enjoy!
