January always feels like a busy month. With all the new year goals and ambitions most of us have, some days I want to make sure I have healthy snacks on me if I am running around and don’t know when I will have time to eat. There are some days in your life when you just don’t have time to schedule a lunch. I created the perfect and easiest, yet still nourishing snack for “on the go”. These Peanut Butter Energy Date Balls are super easy to toss in a baggie and throw in your gym bag or purse.
Do you incorporate chia seeds in your diet? These underrated and often overlooked seeds, may be small but they sure are mighty. This super seed is an excellent source of omega – 3 fatty acids, antioxidants, fiber, and calcium. Omega 3 fatty acids help raise HDL cholesterol aka the good cholesterol that protects against heart attack and stroke according to many studies. Chia is an ancient Mayan word for “strength”, appropriate as they are known to provide sustainable energy.
The other known superfood and natural sweetener in this recipe is dates. A study found that when mice were fed food mixed with dates, they had significant better memory and learning ability compared to those that didn’t. This brain boosting and energy filled snack will have you tackling all your goals and errands throughout the day.
They are also great for hikes, races and road trips!
-1c dates (pitted and soaked in warm water for 10 minutes)
-1 tbsp chia Seeds
-2/3c rolled oats
-1/4c dark chocolate
After dates are soaked in water for 10 minutes, pulse them in a food processor until they are blended in small pieces. Add in oats, chia seeds, and chocolate and blend until combined. Roll into balls with your hands and pop in the fridge or freezer for 10 minutes to set.
